Simac MX700 PastaMatic Pasta Maker Review

Simac MX700 PastaMatic Pasta Maker
Average Reviews:

(More customer reviews)
Having read all of the reviews of the machine, it strikes me that people who have had trouble are probably not used to making things that require a level of attention. Making pasta is not like using a breadmaker. You can't just put all of the ingredients in the machine and walk away. Having used a CTC Pasta Express for years and being generally satisfied with it, I wasn't in the market for a machine as expensive as the Simac. But as an earlier reviewed observed, a large mail order company was selling it for 119 dollars including shipping. I decided to give it a try.
The PastaMatic 700MX operates differently than most models. For one thing, you have to weigh your flour and carefully measure the egg mixture(I use Egg Beaters). It takes longer to knead than my CTC too.
BUT...it makes the best pasta I have ever tried. The strands are much thinner than the CTC and a short dip in boiling water produces a superior pasta. I have purchased additional dies from Lello and look forward to trying them. The complaint about not being able to use 100% semolina is a recognition that that flour alone is just too dense and coarse for an extruder. No electric machine recommends using 100% semolina. But you can use a mixture of semolina and durum flour, which is a finer grind of semolina.
As for the cleanup, I was expecting all kinds of problems but it really wasn't any more difficult than any other appliance. Let it sit for an hour or so and the remaining dough will harden and be much easier to remove.
In short, I really like this machine! It takes time to make it work but that is time well spent.

This spicerack is AMAZING! The greatest thing about it is that you can set it by the stove and you don't even have to measure as you cook. If you turn the canisters one notch, it automatically measures 1/4 tsp for you. It rotates easily around, and the canisters stay on the rack as it rotates. If you don't want to use the automeasure feature, the tops of the canisters lift open for easy pouring or sprinkling. My one and only complaint about it is that I wish it were bigger. I could use a double decker.

Viking Professional Blender Review

Viking Professional Blender
Average Reviews:

(More customer reviews)
I don't own a food processor and the couple I've had over the years did nothing to make cooking simpler. So, when I needed to replace my blender, I simply wanted something that was better than what I had before. (Cuisinart). I researched the subject and found this blender to be the most highly reccomended. I wasn't happy about having to pay so much, but the price, while significant, is not out of line. I was surprised to find that though there are all kinds of blenders to be had, they are almost all of about the same quality. Even the better ones have trouble crushing ice and if used regularly, can not last more than two years.
This is why I am willing to pay what looks like too much. This blender is a high quality appliance that does what it claims it will, lasts several years, and saves money in the end. I didn't buy it to make drinks. Yes, I discovered that nothing handles ice like this, but it does so much more that most blenders would choke on. I bought it primarily for dog food. I grind broccoli down to nothing. It's what killed my last blender. This just goes right through it. The trick, I learned, is to feed it small amounts at a time.
Like so much else, when you pay that much more, you end up with some strange thing with few "features". The face of this appliance has a dial and that dial has four positions; one of which is "off". There is a high speed, a low speed, and "pulse". That is all. That is all it needs. I have never seen anything like this. It chops quickly and grinds uniformly. I wouldn't try it, but I wouldn't be surprised to learn that it could grind rocks.
If you don't mind forking over a bit more, well, you get what you pay for. This is in a class all it's own. Seriously: there are blenders, and then there is this. It has a strong motor that does not complain at tasks that slow most blenders. It handles ice cubles like they are butter. I expect that I won't be buying a new blender again for many years, if ever. I had serious reservations regarding paying so much for a device I have never had a good experience with. I am so glad I took the risk. I suspect I will still have no regrets about this purchase a decade from now. Most blenders can't go ten months!

Slap Chop Review

Slap Chop
Average Reviews:

(More customer reviews)
I purchased two of these to give as gifts this past holiday season. One of which went to my husband, my in-house chef, who seems to be constantly chopping celery or onions for various dishes. I'd seen the ads on TV for it and loved the simplicity of the device. I have an electric chopper, but thought the Slap Chop looked a bit more compact and would travel well for camping trips.
Out of the box I noticed that the plastic used in the device is fairly flimsy. The blades too are very thin. The entire product does not seem to be designed with durability in mind, and if used gingerly, it would probably stand up to a year or two of weekly, light use at most.
To test the product I tried a hard boiled egg first. The egg got stuck in the blades and really didn't get chopped as much as 'mushed'.
The next test was an onion. You have to start with a fairly small piece and yes, 'slap' the top which propels the chopping blades down in a plunger-type action to the cutting board below. It cut the onions, I then twisted the device to get another angle on the onions and did it again. The Slap Chop worked OK for onions.
Tomatoes were next. Starting with a quarter of a tomato, the Slap Chop did its thing. The harder and faster I slapped the blades down, the better the cut. Still, it seemed like a knife would work just as well and be just as fast considering set-up and clean-up times too.
Clean-up was easy, which is perhaps the Slap Chop's best feature. Not much more difficult than running your knife under the water.
The bottom line: a flimsy kitchen tool that won't replace a good knife. Not the amazing time-saving device I'd hoped for and not something I would recommend to my friends. It could be something for the picnic basket, camping or hiking gear kitchen, but durability is likely to be an issue.

KitchenAid Artisan 5-Quart Stand Mixers Review

KitchenAid Artisan 5-Quart Stand Mixers
Average Reviews:

(More customer reviews)
My wedding gift mixer (a Sunbeam Mixmaster) turned 33 a week before Christmas, and my husband thought it was time for me to have a new one. He gifted me on Christmas with the KitchenAid 5 Qt. Artisan in white. I love this mixer and leave it out on my counter, something I never did with the Mixmaster. I recently purchased the citrus juicer attachment from Amazon and am very pleased with it as well. I have not read all 109 previous reviews on this site, but I have read a few that were disgruntled because their Artisans did not mix well. I initially had the same problem with the beater/bowl clearance. It is very simple to remedy. There is a beater adjustment screw on the mixer and the manual describes how to make the adjustments. I got even better instructions by calling customer support at KitchenAid. The technician told me to drop a dime into the empty bowl, turn the mixer on (about setting 2) using the flat beater, and it should move the dime 1/4" to 1/2" each time it rotates around the bowl. This is the right clearance for the beater to mix everything at the bottom of the bowl, but not low enough to cause wear on the beater from constant friction with the bottom of the bowl during usage. I tweaked the screw setting 1/4 turn each time until I got that dime moving. At this setting, I can now beat a single egg white to stiff peaks in the 5 qt. bowl. That's impressive.
This mixer is as sturdy as a tank, and you can hear the quality as it mixes. Although I had previously purchased a KitchenAid mixer for my daughter as a gift, I would never have splurged on one for myself.I am so happy my husband thought I was worth it!

Food Chopper (Perfect Chopper) Review

Food Chopper (Perfect Chopper)
Average Reviews:

(More customer reviews)
Pros -
Chops firmer stuff like onions, bell peppers, etc. pretty well. Gotta be careful not to underestimate # of chops, then chop more if pieces too big. Otherwise a couple or three extra chops can result in a semi-puree!
Cleanup is pretty easy and quick.
Cons -
Useless for mushrooms, which is one of the things I need to chop most often - the pieces of mushrooms get wedged in between the blades, which prevents the blades from being lifted all the way back up for the next chopping motion. I had to use a couple of different small utensils to get in between the blades and unwedge the pieces.
Reassembly would be a breeze except for one thing - there's a piece with cutouts that slides over the blades and keeps the chopped pieces from getting in the chopping mechanism, and you have to slide it off the blades for cleanup, then slide it back on over the blades to reassemble. The PROBLEM is that there's very little wiggle room in the cutouts on that piece, and the material of the piece is a bit pliable, so the cutout spaces get compressed, making it a ROYAL PAIN to get it to line up properly to slide back up over the blades. I worked out a way that has it a bit easier, but it took a bit of trial and error, I'd explain it but I think it's not worth the trouble.
Thankfully I got it for only 5 bucks on sale at CVS/Pharmacy, so not such a terrible loss.

Victorinox 40520 Fibrox 8-Inch Chef's Knife Review

Victorinox 40520 Fibrox 8-Inch Chef's Knife
Average Reviews:

(More customer reviews)
The Forschner 40520 was rated as "best overall" in Cooks magazine in Fall 2004. Pretty good report card from "the" chefs magazine. It took top honors over several high end ($80 -$100+) Wusthofs and Henckel models. While they didn't claim that the Forschner was better at any one specific task or that the craftsmanship can stand up to the others (its blade is cut from a blank ribbon of steel, instead of a hand-forged one piece) they did say that its lighter weight was preferred by some of their testers and that it handled the basics just as well as more expensive models. I just took delivery of mine last week and I am putting it to the test. I can say that it arrives razor sharp...nice... and that it's fairly well balanced. The handle is made of a grippy composite that allows you to securely hold firm if wet or in akward positions. The handle is a little longer than others I've owned, maybe too long for small hands, but it is contoured so you can move up towards the blade for better control. The blade does have a nice rocked contour, which makes chopping & dicing easier. I've grown to prefer ligher weight blades and you don't sacrifice much when it's this sharp. Overall I would say that for the price, this is a great chef knife..time will tell if any problems develop. Definitely doesn't have the same craftsmenship or allure of one of the high end Germans, but if your looking for a highly functional, lightweight, standard chef, it's hard to go wrong here.

From the inventors of the famous Swiss Army knife comes a line of fine cutlery designed for accomplished and aspiring chefs at work or in the home. Each blade in the Stamped collection is expertly made in Switzerland from high-carbon stainless steel and undergoes a special tempering process for an edge that can be resharpened again and again. The result is a knife that can keep its original sharpness throughout the entire life of the blade. Each blade is conical ground throughout its length and depth, and laser tested to ensure optimum cutting power and durability. Ergonomically designed to minimize wrist tension, the unique, patented Fibrox handles are slip resistant when wet. Plus, all Stamped cutlery with Fibrox handles is approved by the National Sanitary Foundation (NSF). Although cutlery steel is naturally sanitary, materials and construction details of these handles minimize crevices that may otherwise offer hospitality to bacteria. The Victorinox Stamped collection is an extensive range with open-stock pieces as well as handy and versatile sets.
Often referred to as a chef's best friend, the 8-inch multipurpose chef's knife is designed for chopping, mincing, slicing, and dicing. Sized for comfort, it's also available in 6- and 10-inch versions as well. All Stamped cutlery should be washed by hand for best care, and Victorinox covers each piece with a lifetime warranty against manufacturer defects.
From the Manufacturer
Who is Victorinox? Although Victorinox is known the world over as the creator of the Original Swiss Army Knife, the company started out in 1884 as a cutlery workshop. By the time company creator Karl Elsener delivered his first pocket knife to the Swiss Army, his cutlery business was already booming. Over the next century, Victorinox cutlery became a top-rated choice among professionals worldwide, with over 300 blades to offer.
Victorinox knives have regularly appeared as highly ranked and recommended kitchen tools in Cook\'s Illustrated, Men\'s Health, The Cincinnati Enquirer, New York Magazine, and Natural Health, just to name a few. In 2009, the company announced a partnership with professional chef, Daniel Humm, of Eleven Madison Park in New York City. In addition, building on the success of its cutlery business, Victorinox has brought all the same quality and expertise to a wider range of products and accessories, including other kitchen tools, pocket tools, watches, luggage, and clothing.
Who is R.H. Forschner? Victorinox had been a staple in European commercial cutlery for over 50 years when approached by New York\'s R.H. Forschner, known since 1855 as a builder of scales for butchers, to be their sole cutlery supplier. The two companies joined forces in 1937, and R.H. Forschner subsequently became North America\'s dominant professional brand, as ubiquitous in the bustling meatpacking plants of the Midwest as it is in the gleaming, four-star restaurant kitchens of Midtown Manhattan.
As a division of Victorinox/Swiss Army Brands, R.H. Forschner marketed cutlery under the brand name "RH Forschner by Victorinox" and distributed to the commercial, food service, and retail trade classes. That brand has been considered a top choice of professionals worldwide with over 300 styles of blades bearing the R.H. Forschner name. However, in 2009, in conjunction with Victorinox\'s 125th anniversary, the company, Victorinox Swiss Army, Inc., has decided to remove the "RH Forschner" name from all blades. Blades thenceforth only include the "Victorinox" name.
What is a stamped blade? A stamped knife can usually be identified by the absence of a bolster. Stamped blades are cut into their shapes from cold-rolled pieces of steel and then ground, tempered, and sharpened. Creating them requires many less steps than forging and results in lighter, narrower blades. Some professionals prefer the thicker, heavier forged blades, but many pros, who spend much of their day cutting and slicing, enjoy a lighter knife since it\'s less fatiguing and easier to manipulate at speed.
Stamped knives are easier to produce and therefore less expensive. They perform very well and can approach the quality of a forged blade, but not the weight or feel. Victorinox manufactures a complete range of stamped blades with unique, patented Fibrox handles and they are considered among the greatest values in the knife industry.
What knives do I need to own? Knife choice or selection is determined by many factors--size, function, style, and preference. The most important factor is function. Different knives have different uses. It is important to use the proper knife for a specific task, since proper knife selection and the use of a proper-sized, sharp knife make for safe cutting. General kitchen tasks and the knife to use for them are as follows:
Paring: The most common to own and use, a paring knife is generally for small cutting jobs and peeling of vegetables or fruit. The blade size is usually from three to four inches. Choose the shape and size to fit your hand. Since this is one of the more versatile knives, owning more than one is recommended.
Chef's: The most important tool and essential to every cook, a chef\'s knife is most often used in a rocking method to mince, dice, and chop vegetables and herbs. This one is known as the chef\'s best friend.
Slicer: Most commonly used to slice meats, poultry, and seafood, the slicer is an important companion to any host or hostess.
Boning: As its name suggests, a boning knife is used to trim or remove meat and fish from the bone.
Bread: Designed with a special edge, a bread knife makes easy work of cutting through crusty bread, pastries, or any item with a crust and a soft interior.
Fillet: Most often used by pros and seasoned home chefs, the fillet knife is used to fillet meat and fish.
Cleaver: An important addition to any collection, a cleaver is often used to cut or chop through bones.
Santoku: This knife combines the features of a cleaver with a chef's knife. The curved blade helps the rocking motion used for chopping, and the wide blade works well for scooping sliced food off a cutting board and for crushing garlic. The santoku can also be used to slice meat and has a narrow spine for making thin cuts.
Utility: An all-purpose knife often referred to as a sandwich knife, the utility knife peels and slices fruits and vegetables, and even carves small meats.
Shaping: With its curved blade, a shaping knife is great for small precision cuts where control is essential, such as peeling, trimming, or garnishing.
What are the different knife edges and what do they do? Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding.
Serrated: An edge designed with small, jagged teeth along the edge.
Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables.
Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel.
How should I care for my cutlery? After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment.
Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher\'s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade.
How do I keep my knives sharp? All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges.

How to "Steel" a Knife 1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip. 2. Hold the knife in your right hand and place on top part of steel as shown. 3. Raise back of blade one-eighth inch. 4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down. 5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel. 6. Repeat five or six times.
When a sharpening steel no longer does the job, it\'s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades.
Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle.
How should I store my knives? Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors.

We love this product! The features on it are fantastic. We especially like the probe setting. You simply insert the probe into your meat and it will monitor the cooking process until the meat has reached the desired temperature. It then automatically switches to a low setting to keep your meal warm until you are ready to eat. There's no guessing how long it will take to cook. Throw in a few vegetables and have a home-cooked meal with very little fuss!
Another awesome feature is the clip-tight gasket lid. It's perfect for traveling to pot-luck dinners without worrying that you will ruin the upholstery in your car from a spill.
Our family highly recommends this product!
One note of caution. Watch the price when ordering online. Amazon currently has it selling for nearly $200, but it can be found in stores for a fraction of that price--usually $50-$60.

Enjoy healthy, home-cooked meals even with a busy schedule thanks to this easy-to-use programmable 6-quart slow cooker. Simply add ingredients to the unit's oval-shaped stoneware pot, insert the pot into the electric base, and select one of three automatic-cooking options--program, manual, or probe--using the flat-panel push-button control panel with digital display. Especially convenient when away from home, program mode cooks for a specified amount of time, then automatically shifts to keep-warm so food doesn't overcook. Manual mode allows for selecting high or low heat settings--great for cooking the traditional way without setting the time or for heating up previously cooked food. When cooking a large cut of meat or using a recipe that requires food to reach a certain temperature, use the probe mode. The included thermometer probe takes the guesswork out of slow cooking. After reaching the desired internal food temperature, the slow cooker automatically shifts to keep-warm. The thoughtfully designed slow cooker also provides attractive stainless-steel housing, power-interrupt protection, a clip-on spoon, a clip-tight gasket lid, and full-grip handles for safe transport. The removable stoneware and tempered-glass lid clean up easily by hand or in the dishwasher, and a user manual with recipes comes included. Perfect for soups, casseroles, pot roasts, curries, and more, the slow cooker measures approximately 10-2/5 by 16 by 16 inches and carries a one-year limited warranty.

Progressive GT-3520 International 19-Piece Measuring Cup and Spoon Set Review

Progressive GT-3520 International 19-Piece Measuring Cup and Spoon Set
Average Reviews:

(More customer reviews)
Compaired to other sets, you get more in this set for the same price or less without giving up quality. Plus, you can't put stainless sets in the microwave to melt butter.
Pros:
1. Large set with odd sizes (like 3/4 cup)
2. I won't likely use the really small (like 1/32 tsp) but they can be used as a flour leveler to scrape over the top with the larger cups.
3. Sizes are not printed/painted on so they won't wear off
4. Weighted properly so that when I set it down they lay flat. My old set tipped over.
5. Nice mix of colors which makes them pretty but also makes it easier to tell close sizes apart.
6. The measures are in labled in cups and mL. No conversions.
The only thing I don't care for is that they don't stack together perfectly. The set is in 3 parts - 1 set of large cups, 1 set of medium cups and then a set of spoons. Each individual set stacks well, but when putting the 3 sets together they don't nest perfectly. Minor detail, so it's not worth subtracting a star over IMHO.

Stars to lag when making soups and puree, gets hot. Small plastic pieces will break. Food gets lodged into handle, molds- then stinks and when you want to clean it out you quickly notice its not easy and very time consuming(poor design).

Don't waste your money. Food gets stuck between the blades, and what it does cut winds up as slivers even when you turn the blade. I worked with it for about a week and decided it was easier to hand cut everything.

KitchenAid KPFP850PM Pro Line Food Processor, Pearl Metallic Review

I used to own the KFP670WH which was rated #1 by Consumer Reports and was great but unfortunately now discontinued!
I recently had to buy another food processor and saw KitchenAid had the "Tim Taylor" version of my previous model. I am quite disappointed with it and don't think it is worth the $450 I paid.
It is massive! Eats up counter space.
The shredder disk only comes in a 4mm version which I don't like for grating carrots or other similar vegetables. It is too coarse. They also didn't include reversible disks so you could increase your shredding options as you can with its smaller counterpart model.
When using the chef's bowl and the shredding disk, the outer bowl gets dirty on the rim so you still have to wash it. When grating carrots this is not good! Carrots stain the plastic so you end up washing two bowls.
Large pieces of carrots get lodged between the disk and the cover so you have to open the cover and remove the food.
I haven't used it extensively but I have contacted Kitchenaid and expressed my dissatisfaction.
Bigger is not always better

I liked mine so much that I bought one more as a gift. They are especially suited for those who already have a smaller one but at times need the bigger size. It is regrettable, however, that all the products we need and want seemed to be made in China. Wont you, please try to make that known in the advertizement for those to whom it matters.

KitchenAid KFPW760 Food Processor, 12 Cup Wide Mouth Review

KitchenAid KFPW760 Food Processor, 12 Cup Wide Mouth
Average Reviews:

Very unhappy with this much touted processor You can't make a decent pesto sauce, neither the small blade for mini bowl, or normal multipurpose blade chops basil or small leaves well..For pesto you need a different appliance or mortar and pestle, not this behemoth. Worse, it is impossible to clean the multipurpose blade inside the shaft. When you make a paste or forcemeat it sticks like crazy glue to the plastic and no amount of soaking, heavy duty cycles in the dishwasher or wishful thinking can get the gunk out of the blade. Other foods stick to the plastic bowl - very difficult to clean, even after two runs in a good dishwasher. Kitchen Aid customer service couldn't offer any advice. Totally useless to call them. They are of absolutely no help.
This appliance is very heavy, don't count on taking it out each time. It has to have a dedicated spot on the counter. Doesn't come with fine slicing or shredding blade. Pulse action works well. Next time I'll go back to the more reliable and user-friendly Cuisinart.
